“Real pizza, real thin” is how Joseph Vetrano, 40, of Roslyn Heights, describes what he sells at SkinnyPizza, which opened there in March.

The menu features crisp, thin-crust pizza in original, whole-wheat and gluten-free varieties with healthful toppings. The tomato sauce is made in-house with organic tomatoes; the cheeses are all-natural and include part-skim and vegan soy options; the meats are antibiotic- and hormone-free.

Shrinking the crust cuts the carbohydrates and the calories, Mr. Vetrano said. A generous slice of the SkinnyClassic pie as it is served in-house (one-sixth of a 16-inch pie) weighs in at 248 calories ($2.50 a slice, $8 for a 10-inch personal pie, $13.50 for a 16-inch pie). For take-out, pizzas are cut in eight slices.

Three years ago, while working at Papa Ciro’s Pizza and Pasta, his family’s 32-year-old restaurant in New Hyde Park, Mr. Vetrano experimented with a thin-crust pie that developed a strong customer following. “I saw the trend changing, with people cutting back on bread, looking for lower calorie counts,” he said. Mr. Vetrano trademarked the SkinnyPizza name and, with Michael Tenedorio, 42, of Huntington, opened the pizzeria, a handsome spot with 16 seats, green banquettes and natural wood furnishings.

Eleven specialty pizzas include a SkinnyShrooms pie, topped with shitake, porcini and cremini mushrooms ($22 for a 16-inch pie) and the SkinnyBuffalo, with baked chicken, hot sauce and blue cheese ($21 for a 16-inch pie). Build-your-own pizzas, with ingredients like grilled eggplant, truffle oil and arugula, are also available.

Organic green salads ($7.95 to $8.95 ) and regular, whole-wheat and gluten-free pastas ($6.50 to $8 for a 14-ounce portion) round out the menu. (A 19-ounce portion is also available, $8 to $9.50). The self-service soda fountain has a selection of Boylan all-natural sodas in flavors including black cherry, root beer and cane cola ($2 for a 20-ounce cup). SUSAN M. NOVICK
